Shrimp Wrapped in Pancetta
Shrimp Wrapped in Pancetta the recipe serves 4 and here’s how to make it.
Begin by preheating the oven to 475 degrees.
Warm _ cup extra-virgin olive oil in a large sauté pan over medium-high heat. Add 12 jumbo shrimp that you have peeled and deveined and sauté quickly until they turn pink, about 3 minutes.
Transfer the shrimp to a plate while you continue.
Add _ cup Cognac and deglaze the pan, scraping up the brown bits on the pan bottom, and set the pan aside off the heat.
Next wrap each shrimp in a slice of pancetta which is Italian cured bacon. Once the shrimp are wrapped, arrange them on a baking sheet. Place in the oven just long enough for the fat of the pancetta to begin to melt…this should take 4 to 5 minutes.
Now reheat the pan juices. When the shrimp are ready, transfer them to 4 individual serving plates, top with the pan juices, and serve at once.
